The Phase II composting process takes place in a Phase II tunnel where the process layers the material approximately eight feet high on a slotted concrete floor, which permits aeration throughout the mass. It is here that Pasteurization takes place and destroys all undesirable organisms. This is achieved when the air and substrate are maintained at the 138 degrees F for six to eight hours. Once completed, the mass is gradually cooled to conditioning and held for four to five days at 118 degrees F until it is ready for the next stage.
